'Banh Mi' Style Chicken (GF, DF)

Ingredients

500g chicken breast (chopped roughly into cubes)

For chicken marinade:

1/4 cup fish sauce
Juice of 1 lime
2 tsp coconut sugar
1 teaspoon dried basil
3 garlic cloves, minced

Veggies:

4 cups of thinly sliced freen cabbage
2 cups of julienned carrots
2 cups of julienned sweet potatoes
1 zucchini
2 cups of mushrooms
1 teaspoon sea salt


For garnish:

1/2 cup of cilantro
1/2 cup of spring onions
chopped peanuts

Extra Sauce:
add additional soy sauce or coconut aminos (optional)





Directions

Prepare the marinated chicken:

  1. Cube chicken.
  2. Add fish sauce, basil, lime juice and garlic into a bowl.
  3. Add chicken and mix it well into marinate.
  4. Cover and put in fridge (for at least 1 hour)

Veggies:

  1. Peel carrots and sweet potato.
  2. Chop all the veg.
  3. Add to  large baking tray.
  4. Add salt

Next, add chicken together with marinade over the tray.

Bake at 200 degrees Celsius (400 degrees Fahrenheit) for 30 mins.

When serving up add about garnishes on top or on the side.

Notes

Optional accompaniment:

Soba Noodles (I eat it without noodles because they contain gluten. But if that's not an issue for you, then this is a great carb-accompaniment)
