Beetroot Hummus (GF, DF, Vegan)


Prep Notes

You will need:

  • a food processor;
  • cooking pot and cooker to boil the beetroot. (Or just use pre-boiled beetroot)

Ingredients

1 large beetroot
1 cup of chickpeas
2 tbsp of olive oil
1&1/2 tbsp tahini
1/2-1 cup aquafaber / or water
Juice of one lemon
2 cloves of garlic
1 tsp sea salt
A dash of pepper
1/2 tsp cumin powder

Directions

In a cooking pot, boil beetroot for 10 mins. 

Using a food processor, blend beetroot. 

Add chickpeas and garlic and blend again. 

Add tahini, oil and water and blend. Tip: Add water in stages to make sure it doesn’t become too runny. 

Add the rest of the ingredients and blend again!
