Birthday Cake (GF, DF, refined sugar free)

I made this banana birthday cake for my daughter's first birthday because 1. it's super tasty and 2. I don't give her any sugar yet and therefore wanted to make a sugar free cake. And, as I am gluten and dairy free, I also made the cake GF and DF.


Here is the recipe - enjoy!

Ingredients


Cake batter:

5 small eggs
6 medium sized ripe bananas
1/2 cup melted coconut
3 tbsp of ground flaxseeds
2 tsp cinnamon
1 cup of almond flour
2 cups of oat flour
6 crushed walnuts (12 halves)
2.5 tsp baking powder
3-4 drops of stevia concentrate (I use Now's)
(Optional: 1 cup of chocolate chips)




Directions



Batter:


  1. Mash bananas, whisk eggs and combine.
  2. Add melted coconut oil, Apple sauce, ground flaxseeds and cinnamon. Combine well.
  3. Gradually add the rest of the ingredients, while mixing the batter. 
  4. (Optional: add 1 cup of chocolate chips - I didn’t do this for the birthday cake but I used some of the batter to make cup cakes and added chocolate chips - i.e. the adult version) - if you use ALL of the batter for the birthday cake, you can make two layers of a standard circular cake pan. 
  5. Bake at 180 degrees C (356F) for 35 mins, depending on the pan you use. (If you’re making cupcakes, they only take 20 mins, bigger cake tins 35 mins. Loaf tins - 40-50 mins.)

Icing:


  1. Soak 3 cups of cashews in water overnight in fridge. Make sure cashews are steeped in water.
  2. Discard water. In a blender add the cashews, together with the rest of the ingredients for the icing and blend until smooth.
