Blueberry Banana Cake/ Muffins (GF, DF, refined sugar free)

Ingredients

3 ripe bananas

1/4 cup melted coconut oil

2 eggs

1tsp vanilla extract 

1/2 cup unsweetened apple sauce

2 tbsp ground flaxseeds

1.5 tsp baking powder

1 tsp cinnamon

1 cup almond flour

1 cup oatmeal flour

1 cup of blueberries chocolate chips 

1/2 crushed walnuts (another 1/4 cup for decorating)

Directions

  1. Mash bananas. 
  2. Add coconut oil. 
  3. Then, gradually add all the dry ingredients and eggs. Mix in until the dough is creamy. 
  4. Fill in loaf or muffins form(s). 
  5. Bake at 170 degrees Celsius (340 degrees Fahrenheit) for 50 mins.
