Carrot Cake Cupcakes (GF, DF, refined sugar free)

Ingredients

  • 2 ripe bananas (mashed)
  • 1 cup of apple sauce
  • ½ cup of almond flour
  • ¼ cup of coconut flour
  • 1 tbsp of cinnamon powder
  • ¾ cup of raisins
  • ½ cup of chopped walnuts (plus 12 halved orwhole walnuts for decoration)
  • 1 cup of grated carrots (leave another ¼ cupaside for decoration)
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp bicarbonate soda
  •  (Optional:for extra sweetness 5 drops of stevia liquid)

Directions

  1. Mash bananas.
  2. Add apple sauce.
  3. Gradually stir in flours, cinnamon, raisins,walnuts, carrots. 
  4. In a separate bowl, whisk eggs and then stir into mixture.
  5. Add baking powder and bicarbonate soda and mix well.
  6. Spoon into cup cake forms and bake for 30 mins at 180 degrees Celsius (356 degrees Fahrenheit) (Fan oven).

Makes about 12 cupcakes.
