Base:
150g ground up cauliflower
1 beaten egg
¼ cup of ground flaxseeds
2 scoops of collagen protein powder
Tip: you can substitute the ground flaxseed powder with ground nut flour (e.g. almond flour)
Spice with:
2 tsp oregano
1 tsp garlic powder
1 tsp salt
1 tsp pepper
Topping:
1 ½ tbsp tomato paste
1 sliced tomato
2 sliced mushrooms
grated vegan cheese (however much you desire but about 1/2 a cup)
Base:
1. Grind cauliflower in a food processor until finely chopped.
2. Beat egg separately in a cup, and then stir into chopped cauliflower.
3. Add flaxseeds, protein powder and spices and mix until all ingredients are well combined.
4. Tip: If mixture is wet (because your cauliflower is watery) add more protein powder and flaxseeds.
5. Spread mixture onto a baking tray lined with baking paper until the base is approximately 3-4 cm thick.
6. Bake at 200 degrees Celsius (400 degrees Fahrenheit) for 20 minutes or until golden brown.
7. Let it cool for 10 mins.
8. Spread tomato paste evenly over the base.
9. Then add topping.
10. Bake at 160 degrees Celsius (320 degrees Fahrenheit) for 10-15 minutes.
