Chocolate chip cookies / Edible Cookie Dough (vegan, GF, refined sugar free)

This recipe also makes the perfect edible vegan chocolate chip cookie dough.

Yields

12 - 14 cookies

Ingredients

  • 1 cup of almond flour
  • 2 tbsps of coconut sugar
  • 1/4 cup of avocado or coconut oil
  • 1/4 cup of cashew butter
  • 1/4 cup of maple syrup
  • 1 tsp of vanilla extract
  • 1/2 cup of chocolate chips
  • 1 pinch of sea salt
  • 1/2 tsp of baking powder
  • (Optional: 3 scoops of collagen peptide protein powder. Note - this definitely changes the consistency of the cookies) 

Directions

  1. Combine dry ingredients.
  2. Add 'wet' ingredients and combine using a wooden spoon or spatula.
  3. Shape into little balls and put on a baking paper lined oven tray.
  4. Bake for 15 - 20 mins at 180 C. (I recommend periodically checking to make sure they are baked as golden as you like them.)
