Creamy Coconut Fish Chowder (Dairy and Gluten Free)

Ingredients

  • 1 tbsp of coconut oil
  • 2 cloves of garlic (finely chopped) - I usually use the "lazy garlic" that you can buy pre-chopped
  • 1 sweet potato (cubed)
  • 1 courgette (cubed)
  • 1 red pepper (cubed)
  • 1 can of coconut cream
  • 1/2 cup - 1 cup of water
  • 120g of smoked salmon (diced)
  • 2 cod or white fish fillets (I pre-baked these and thenbroke them up and put them in the pot)
  • 3 chunks of frozen spinach
  • 1 tsp of smoked paprika
  • Salt and pepper
  • Tip: if the stew needs to be thickened, you can add some rice flour or arrow root flour to thicken the broth

Directions

1. Heat coconut oil over medium heat and sauté garlic.

2. Add fresh veggies and sauté for a few minutes over medium heat before adding coconut cream.

3. Add the coconut cream and bring to a boil. Reduce to a simmer.

4. Add salmon and white fish.

5. Add frozen spinach and let it defrost while the stew simmers .

6. Add smoked paprika, salt and pepper. Stir a few times. Add a bit of rice or arrow root flour to thicken if needed, and you are done!
