Healthy Brownies (GF, DF, Vegan)

You will need:

  • something to steam or boil the sweet potatoes;
  • a masher or food processor;
  • a mixing bowl;
  • a baking tin or casserole dish;
  • baking paper; and
  • all the ingredients listed below.



Cooking Time

20 mins (+ 15 - 20 mins baking time)

Yields

About 8 - 10 pieces (depending on how big you cut them)

Ingredients

2 medium sweet potatoes
2 medium ripe bananas
90 g Almond Flour
90 g Buckwheat (or brown rice) flour
3 tbsps date syrup (or 6 Mejool dates)
2 tbsp maple syrup

Optional: for extra sweetness, add some Stevia. (I usually add about 5 drops)

Directions

  1. Peel sweet potatoes. Steam until their soft and mash thoroughly
  2. In a bowl or food processor, mash two bananas, then stir in dry ingredients (almond flour, buckwheat flour, cocoa powder).
  3. Add date and maple syrup.
  4. Fold in mashed sweet potatoes until they are well mixed and the batter is an even and creamy consistency. 
  5. Line baking pan/casserole dish with baking paper and fill with batter 
  6. Bake at 180 degrees (160 degrees for fan oven) for 15 - 20 mins. 
  7. Let it cool before cutting.

Notes

For variation, try adding chocolate chips or chopped walnuts into the batter.
