Keto Pancakes (sugar free, dairy free, gluten free)


Prep Notes

Ingredients

  • 3 medium eggs
  • 1 cup of almond flour
  • 1 tbsp erythrotil
  • 4 drops of stevia (I used stevia drops by Now)
  • 1/2 tsp of vanilla essence
  • 1/2 tsp of cinnamon
  • 2 tsp of baking powder
  • 3 tbsp MCT oil (or other frying oil, like coconut oil or butter. I used MCT oil) 
  • Optional topping: 50g hazelnut butter, 1 tbsp of coconut cream, 50g pomegranate seeds

Directions

1. In a mixing bowl, whisk the eggs until foamy. 

2. Add the almond flour, stevia drops, erythrotil, cinnamon, vanilla essence and stir until well combined. 

3. Add and stir in baking powder.

4. In a large frying pan or pancake griddle, add 1 tbsp of oil. Heat on medium to high heat, and make sure the bottom of the pan is covered. (I used a non stick pan so my pancakes would come out perfectly fried)

5.  Pour pancake mix in the pan using a ladle and let them fry over medium heat for 3-5 mins, before flipping them over. Fry on the other side for another minute. Then transfer onto plate.  

6. Optional: top with hazelnut butter, coconut cream and pomegranate seeds

Makes about 8-10 pancakes.
