Ingredients:
1 cup of boiled mashed sweet potato
1 banana
1 egg
1 tbsp of maple syrup
1/3 cup of coconut milk (or other nut milk)
1/2 cup of almond flour
1 tsp of baking powder
1 tsp of bicarbonate soda
1.5 tbsp of cacao powder
1 tbsp of peanut butter plus 1 tbsp extra to add to thecentre of each cupcake
(Extra optional ingredients i added: flax and chia seeds andone scoop of collagen peptides)
Method:
1. Mash sweet potato and banana.
2. Add in maple syrup and coconut milk and dry ingredients.Mix well.
3. Add egg. Mix until all ingredients are well combined.
4. Bake at 180 degrees Celsius for 10 - 15 minutes in a fan/convection oven. (15-20 mins in a conventional oven).
180 degree Celsius = 356 degreesFahrenheit
