Peanut-Coconut Curry (GF, DF)


Prep Notes

Ingredients

1 sliced zucchini

1 cup of diced boiled sweet potatos

1 cup of Diced chicken

1/2 cup chickpeas

1 cup of coconut milk

1 teaspoon of peanut butter

1 teaspoon of curry powder

1 teaspoon of cumin powder

(2 servings or in my case,one really big one!)

1 tbsp maple syrup

Juice of 1/2 a lime




Directions

  1. Peel, boil, dice sweet potato.
  2. In a separate pan, lightly sauté chicken chunks.
  3. Add sliced zucchini, chickpeas and coconut milk and bring to a boil.
  4. Add sweet potatoes and stir. It’s ok if they disintegrate a bit as it’ll thicken the sauce.
  5. Add peanut butter, maple syrup, lime juice and spices.
  6. Reduce heat and let it simmer for 15 mins.
  7. If you need to thicken it, use 1 tsp of arrow root powder or other thickener.
