Rocket, Raisin and Sweet Potato Salad

Ingredients

  • 4 large sweet potatos (chopped into small chunks)
  • 1 tbsp Cinnamon
  • 1 tbsp Curry powder
  • 1 tbsp garlic powder
  • 1 – 2 tbsp of Olive oil
  • 4 cups of rocket
  • 1 cup of watermelon (chopped into small chunks)
  • 1 cup of raisins

Dressing:

  • 2 tbsp of olive oil
  • 1 tbsp of maple syrup
  • 2 tsp of cinnamon
  • 2 tsp of curry powder
  • 1 tbsp of water


Directions


  1. Peel sweet potatoes and chop into small cubes.
  2. Spread on roasting tray, adding olive oil and spices evenly. (Tip: to make this easier, add olive oil, spices, garlic and sweet potato into separate bowl and toss for a 30 seconds.)
  3. Roast for 20 mins at 180 degrees Celsius (356 degrees Fahrenheit) using a fan oven.
  4. Wait to let the sweet potato chunks cool.
  5. Meanwhile, combine dressing ingredients in a separate bowl/cup/jar. (Tip: I like to use a jar so that I shake it up!)
  6. Then, in your salad bowl, add all the remaining ingredients (rocket, watermelon, raisins and sweet potato), pour dressing over and toss.
