Vegan Meat Balls (GF, DF, Vegan)

You will need:

  • somewhere to boil your sweet potatoes and lentils and a  cooking pot;
  • a masher or food processor;
  • a mixing bowl and stirring implement;
  • a large spoon;
  • a large baking tray;
  • parchment paper; and
  • your hands.

Cooking Time

30 mins (+ 30 mins baking time)

Ingredients

3 cups of boiled lentils
3 cups of boiled and mashed sweet potato
2 cups of chickpeas
2 tbsps chia seeds
1 tbsp flaxseed
1/2 white onion finely chopped

Spices:
1 tbsp of smoked paprika
1 tbsp cumin powder
1 tbsp garlic powder
1 tsp oregano
2 tsps salt (or more if desired)
1 tsp cracked black pepper

Directions

  1. Boil lentils, and sweet potatoes and mash together in a mixing bowl.
  2. Finely dice white onion.
  3. Add chickpeas, chia seeds, flax seeds and onion to bowl.
  4. Add spices and stir until all ingredients become a well combined batter.
  5. Line baking tray with parchment paper.
  6. Using a large spoon, spoon out one dollop of the mixture at a time and shape with your hands before adding it to the baking tray.
  7. Bake at 180 degrees (160 degrees if using a fan oven) for 30 - 40 mins.
