Zoodles with Vegan Pesto (GF, DF, Vegan)

You will need:

  • a spiralizer;
  • a chopper or food processor;

Ingredients

  • Pesto:
  • 2cups of basil
  • 1/2cup of walnuts
  • 2cloves of garlic
  • 1/2cup of extra virgin olive oil
  • 3tbsps lemon juice
  • 3tbsp nutritional yeast
  • Pinchof pepper and salt
  • Optional: add 3-4 brazil nuts for an extraboost in zinc, magnesium, selenium and B vitamins

Directions

  1. Spiralize zucchini and set aside.
  2. Place basil, walnuts (and brazil nuts), garlic, lemon juice, oil and nutritional yeast to food processor (or chopper) and blend until creamy.
  3. Tip: Add more oil or lemon juice if needed to make the consistency more creamy.
  4. Add pesto, zoodles and chickpeas into a bowl and toss until well combined.
